Café Manager - Luna Hut Sauna Café (Beaconsfield Road, Brighton)
Application deadline: 8th May 2026
Start date: Late May 2026
Hours: Full time - 40 hours per week (including weekends, with 2 days off)
Salary: £27,000 to £31,000 depending on experience
Benefits: Sauna, food and drink discounts
The Luna Hut Sauna Café is a community-focused sauna and café inspired by Nordic sauna culture. Our Beaconsfield Road site combines a calm, high-quality café with outdoor saunas and cold plunges, creating a space where people come to slow down, warm up and connect.
We’re a small, values-led business, not a high-volume chain, and warmth, consistency and attention to detail really matter here.
We’re looking for a hands-on Café Manager to lead the day-to-day running of the café and front of house. You’ll be the key person on site for service, quality and guest experience, often working shifts yourself while supporting the team around you.
This is a largely solo-run café. Often you’ll be opening, serving, prepping and keeping the space running smoothly on your own, so we’re looking for someone who enjoys that responsibility and feels confident being the lead person on site. There will also be sauna hosts on site managing the garden area.
What you’ll be responsible for
Day-to-day café operations
Running café shifts and leading service on the floor
Making sure drinks and food are consistently well prepared and presented
Keeping the café calm, clean and organised at all times
Opening and closing the café and managing daily routines
Food offering and menu development
Leading and improving the café food offering, with a focus on fresh, simple, high-quality vegetarian food
Developing and refining salads, grab-and-go options and seasonal specials
Creating prep systems and recipes that keep quality consistent across the week
Working with suppliers to source ingredients that reflect the brand and keep margins healthy
Balancing creativity with practicality in a small café without a full kitchen
Team leadership
Supporting, training and guiding baristas and FOH staff during shifts
Setting clear expectations around service, cleanliness and guest care
Helping build a positive, respectful team culture
Stock and suppliers
Ordering food, drink and café supplies
Monitoring stock levels and reducing waste
Flagging issues with suppliers and deliveries
Guest experience
Being the first point of contact for café-related guest queries
Handling issues calmly and professionally
Helping the café feel warm, relaxed and welcoming
Food safety and standards
Making sure hygiene, cleaning and food safety systems are followed
Keeping records up to date
Maintaining a high standard of presentation and safety
We’re looking for someone who
Has at least 2 years’ experience running or supervising a café or similar hospitality venue
Is confident leading a small team while also working hands-on
Has a strong interest in food and a good eye for simple, high-quality café offerings
Feels confident creating, refining and maintaining a consistent food menu
Understands food margins, prep efficiency and how to make simple food feel special
Cares deeply about service, atmosphere and quality
Is organised, calm under pressure, and good at problem-solving
Has strong barista skills and enjoys good coffee
Has (or is happy to get) a Level 3 Food Safety qualification
What we offer
A competitive salary for a small, values-led business
A supportive and friendly working environment
Staff discounts on saunas, food and drinks
The chance to grow with a fast-developing wellness brand
